We all love Summer time and the long lazy sunny afternoons, but what to do to keep cool?  A great little twist on sipping Prosecco is preparing a delicious Lemon Sherbet Fizz!

Inspired by a classic cocktail made with limoncello (a lemon liqueur) and Prosecco (Italian sparkling wine), this incredibly refreshing dessert/treat is so easy to make. It’s a yummy combination between a drink, a punch, and a freezy treat that will definitely please the toughest crowd.  It only has a couple of easy ingredients and comes together in seconds, so you’ll be sipping pretty in no time at all.

1. Pop 1 lush teaspoon of lemon sorbet into the bottom of a tall flute

2. Drizzle a dash of lime cordial over the ice cream

2. Top up with chilled prosecco, stir quickly but gently

3. Garnish with a slim quarter or peel of a lemon slice and serve.

Kick back, Enjoy, and engage in the age long debate …do you pronounce it ‘sherbET’, or ‘sherBERT’?  I am in the ‘Bert’ camp  But I know many people who use are on the “Bet” team!

Advanced tip: If you want this treat extra freeeeezy, consider briefly freezing the flutes before serving. You could dip briefly the rim of the flute in lime cordial and dip in

Food pairing: goes so well with biscuits or cookies, my particular favourite would be biscotti of course.

So Bottoms-up then, bring on the heat-wave!
